Pomegranate Juice

POMEGRANATE JUICE

pomegranate juice have high level of powerful antioxidants in it thus have a superior ability to fight harmful free radicals in our body.Though the pomegranate juice is little bit tart and sweet we can enjoy its smoothies,sherbat, milkshakes,yogurt parfait….or in whatsoever form since pomegranate simply tastes delicious in this summer.The pomegranate shake is a super coolant .When diet concern its the best energy source.

INGREDIENTS FOR pomegranate shake:             

  • POM FRUIT -2(or readymade juice a cup)
  • Yogurt -2 cup(optional of shake)
  • Strawberries -4
  • Handful of ice

PREPARATION of pomegranate juice:

  1. For pomegranate juice combine pomegranate,ice,strawberry,a little bit of sugar if you insist in a blender and blend it until smooth,sieve it and serve chilled.
  2. For pomegranate shake simply blend everything with yogurt,and serve immediately.
    It really cools and refreshes your body in hot summer.

FALOODA

This easy recipe  for falooda is one of the famous Asian dessert. This falooda is Colorful and tasty. Falooda easy recipe is easy digestible.

INGREDIENTS:

  • Pre-boiled spaghetti -1/2 cup
  • Mango icecream -3 Scoops
  • Preset mango jelly -2 tblsp
  • Fresh Milk-1/2 cup
  • Any Chopped fruits -1 tblsp
  • (Apple, Pineapple, Banana)
  • Thick juice mango or sugar
  • Soaked sago or
  • Sabudana seeds -1/2 tsp ( optional)

PREPARATION:

  1. Take a tall wide mouthed glass,add all the mixture in a layer form.
  2. First boiled spaghetti thin sized followed by cold milk mixed with sugar ,fruits, jelly ,thick mango syrup and finally scooped ice-cream and sabudana or sabji/basil  seeds soaked in water.
  3. Freeze it until serving. Serve chilled.Serve with a straw and spoon.

Prawn-Fry

 INGREDIENTS of Prawn Fry

  • Medium prawns-1/2 kg         
  • Peppercorns -1 Tblsp
  • Table salt -1 tblsp
  • Ginger garlic paste-1/4 tsp(optional)
  • Coriander powder-1/2 tsp
  • Cardamom seeds of 2 pods
  • Hot smoked paprika-1/2 tblsp
  • Egg whites-1
  • Powdered oats or bread crumbs-2 tblsp
  • Oil for frying

PREPARATION

  1. Crush the peppercorns, salt, cardamom seeds in a grinder  until you have an aromatic mixture.
  2. Turn out onto a large bowl along with Hot smoked paprika and other spices.
    Hand-whisk the egg whites until they are foamy.
  3. Toss the prawn  in the crushed spice mixture turning them so that they are well coated.
  4. Dip the prawn ( Shrimp ) into the egg white and then in bread crumbs or powdered oats. It is optional.
  5. Heat the oil in a large pan and stir-fry the spice-coated prawns for 5–7 minutes or until they are cooked through.
  6. Remove to a serving dish and sprinkle with some more crushed peppercorns and coriander leaves.

KUNAFA (Arabic Sweet dessert)

 Arabic Sweet Dishes Recipes

Kunafa (called as kunafe, Kanafeh, knafeh, kunafeh, kunafah) basbousa and UmAli Dessert are the best arabic sweet dishes traditionally eaten during Ramadan in Arab and middle-eastern countries. Now Easy recipes specially gives you  the easy methods of preparing arabic sweet dessert  Kunafa ( Arabic Sweet Cheese Pastry) and later we will   post UmAli arabic Dessert.

kunafa                Kunafa  is served during Ramadan If tar, the time between sunset and breaking fast by Muslims. Kunafeh  is one of the well known Arabic sweet dessert dishes, with a cream cheese filling in the center.

There are many types of fillings in the basic recipe like banana, cream, cheese and nut, just to name a few.

INGREDIENTS:

  • Kataifi (can be found in most middle eastern, grocery stores)-1 full package or fine vermicelli
  • Butter -200 gm melted

FOR SYRUP:

  • Sugar -1 1/2 cup
  • Water-1 cuparabic-sweet-kunafa
  • Juice of 1/2 lemon
  • Orange blossom or rosewater-1 tsp
  • Blanched  whole almonds & pista-1/4 cup
  • Walnuts,coarsely chopped -5 tbs
  • Granulated sugar-2 1/2 tbsp
  • Cinnamon powder-1/4 tsp
  • Soft ricotta cheese -800 gm
  • Butter, for greasing

PREPARATION:

  1. Prepare sugar syrup with 1 cup of water and 1 1/2 cup of sugar along with lemon juice. Bring to boil, and simmer for 15 to 20 minutes until it forms a syrupy consistency.
  2. Remove from heat allow to cool. Add rosewater, and keep aside.
  3. Pre -heat the oven to 180 degree centigrade.
  4. In a large bowl gently loosen the kataifi dough and mix well with the butter.
  5. Grease the baking pan with butter and place half the dough at the bottom press evenly.
  6. Spread bits of ricotta cheese all over, then cover with the remaining kataifi dough, press gently .
  7. Sprinkle fine pieces of walnuts, almond, pista all over. Sprinkle cinnamon powder and  granulated sugar. Place another thin layer of remaining kataifi and press well.
  8. Bake in the oven for about 30-40 minutes, till the surface is golden brown.arabic-desert-kunafa
  9. Remove from oven and pour sugar syrup all over hot kunafa. Allow to cool completely.
  10. Invert on to serving plate. Decorate with remaining nuts. Serve Kunafa warm.
  11. It is good to warm up before serving, because the cheese tastes better. Kunafa is a well known Arabic dessert all over the world and its really yummy…

KESARI SWEET

Very simple to cook too tasty sweet dish from South India with Semolina (rava) as main ingredient. Kesari sweet is very easy to make simple dessert as a fast food.

INGREDIENTS:                                   KESARI SWEET

  • Rava(semolina) -1 cup
  • Sugar-1 1/4 cups
  • Cashew nuts and raisins -3 tbsp (fried in ghee)
  • Water-2cups
  • Pineapple or any essence-1/4 tsp
  • Orange edible food color- a pinch
  • salt a pinch
  • Ghee- 1/2 cup
  • Cardamon- 4 to 5(well crushed)

PREPARATION:

  1. Pour few tsp of ghee in a hard bottom vessel,roast rava till it turns light brown,keep aside.
  2. Again add the remaining ghee,heat a little,add cardamon,cashews,raisins fry till nice golden brown.
  3. Add water,salt food color,when it starts boiling add the rava(semolina),and stir well without any lumps.cook on low flame for a minute.
  4. Now add the sugar slowly, just the way you added the rava, so it blends in well.
  5. Keep stirring, feel the consistency loosening by itself (the sugar gives out water).
  6. Now add 1/4 tsp cardamon powder,essence keep stirring once again till the kesari thickens.
  7. Pour the ghee generously,and stir well.Don’t let it stick to the bottom.
  8. The ghee starts oozing out on the sides.That’s the perfect time to turn off the flame.you can also add bits of any fruit of your choice.TRANSFER THE KESARI TO A GHEE COATED PLATE,PRESS EVENLY,AND SET TO COOL.
  9. When it s cool cut into any shapes you like.Or serve as such.
  10. This recipe seems to be easy,but it requires lot of practice and patience to bring in the right consistency.The measurement is the main in this recipe.If all gets right you get the most simple and relishing sweet for a sumptuous meal. KESARI

BASBOUSA-SEMOLINA CAKE

ARABIAN BASBOUSA SEMOLINA CAKE 

This basbousa Semolina cake special dish in Ramadan if-tar time. This is very simple to cook.

INGREDIENTS:

  • Melted butter-200 gm  semolina cake1
  • Condensed milk-1 tin
  • Baking powder-1 1/2 tbls
  • Semolina(rava)-2 cups
  • Ground almonds-1 cup
  • Water- 1cup

Syrup:

  • Sugar-2 cups
  • Water- 1 1/2 cup
  • Lemon juice-1 tbls
  • Rosewater- 1 tbls
  • Almonds crushed-1 tbls

PREPARATION:

  1. Mix butter,Condensed milk,Baking powder well to a smooth paste.Add water,semolina and almonds and stir well till all gets combined well.
  2. Pour the mixture in a baking tin. Bake in 190°c preheated oven for 35 minutes,or until its golden in top.
  3. Remove and pour the syrup all over. Refrigerate to cool it completely. Cut into diamond shapes and serve as snack.

Preparation Of  Syrup

  1. Boil sugar and water in a pan. Simmer for 10 min. Remove and mix lemon juice, almonds and rose water.
  2. This Arabic sweet basbousa or the semolina cake should be loose and soft in texture unless like cakes. Decorate on top with almonds and pistas, and enjoy this delightful dessert.

Carrot Milk Shake

  • Grated carrot 1 cup
  • Full Fat milk 1 1/2
  • sugar 2 tbls
  • Saffron a pinch

PREPARATION:

Put carrot and sugar in a food processor and grind it ,pour the milk  and grind it. Now extract the Juice add saffron and serve it chilled with lots of ice cubes,with a fresh mint leaf on top….Simple and Healthy. Quench your thirst in this summer with carrot milk shake.

  • Treatment of Jaundice – Henna barks powder is given as 2 to 5 deci gram doses for this treatment.
  • Treatment of Headache – Put a plaster with a cotton cloth soaked in henna flower concentrate and vinegar.
  • Treatment of Sore (dry) throat – do same as oil pulling with the syrup of henna leaves,and spit it out. This gives good result.
  • Treatment of prickly heat – the paste of henna leaves should be applied in affected area. This reduces body heat.

Today it has become a main ingredient in ladies shampoos. But it is still popular only as beautifying agent.

 Keema Paniyaram ( Crispy Spongy like Muffin )  is a wonderful evening snack for school going kids. Paniyaram will be a  more willing food for kids when made with a slight twist in this recipe. For my kids I simply prepared chicken keema with minced onions, little ginger garlic paste, finely chopped chili, garam masala, curry powder, salt, cook everything and finally garnish it with chopped mint and coriander. Add this Keema mixture to the batter ,slightly fold it and use the same process of making Paniyaram.
