Kabsa     “كبسة”

Kabsa is one among the most popular staple food in Saudi Arabia. Kabsa is a dish of rice & meat. Arabic kabsa is popular among many Gulf countries such as Kuwait, Saudi Arabia, Bahrain, Qatar, and United Arab Emirates.

Kabsa commonly made with chicken and Meat. But mostly in Saudi Arabia chicken kabsa is a famous dish. Kabsa is commonly a National food in Saudi Arabia.

Types of Kabsa    “كبسة”

  • Mandi  –  Boiled Chicken with white kapsa
  • Madgut – Like Indian Biryani
  • Sawaya – Grilled chicken with Yellow coloured kapsa rice
  • Faham  –  Cooked barbeque chicken with Yellow or white Kapsa rice

 Here is a easy recipes dot in version of Arabic Kabsa.   

INGREDIENTS for kabsa:      kabsa-arabic-recipes

  • Chicken pieces – 8(1 kg)
  • Basmati rice – 5 cup
  • Chicken stock – 6 cups(cubes -2)
  • Tomato – 3 diced
  • Tomato puree – 2 tbsp
  • Butter – 100 gm
  • Onion – 2 finely chopped
  • Coriander(chopped) – 2 tbsp
  • Dried lime – 2
  • Buharat spice mix – 1 tbsp
  • Cumin powder or whole – 1 tsp
  • Cardamon powder -1/2 tsp
  • Cinnamon powder or whole -1 tsp
  • Turmeric – 1/4 tsp
  • Ground pepper – 1/2 tbsp
  • Garlic cloves – 4
  • Ginger root – 1 slice
  • Raisins – 2 tbsp
  • Salt – 2 tbsp
  • Olive oil – 4 tbsp

Buharat spice mix:

Red pepper, Coriander seeds, Peppercorns, whole cloves, turmeric, black cardamom, fennel seeds, cinnamon sticks, cumin seeds all in equal amount blend in a processor until finely powdered.

PREPARATION of kabsa:

  1. Cut the whole chicken into 8 big pieces, or 2 halves wash it thoroughly.
  2. In a small bowl,add all the spice mix, salt, coat 3/4 Th of the spice mix to the chicken and leave for 10 minutes.
  3. If you don’t have buharat spice mix you can add Indian spice Garam Masala.
  4. In a pan add half the butter followed by the diced onion and fry till slightly brown.
  5. Now add the chicken pieces to the frying onions, dried black lime followed by tomato puree, chopped tomatoes and chopped ginger and garlic and stir for about five minutes over low heat.
  6. Boil water along with Maggie stock separately. Add this boiling hot chicken stock, pepper to the frying chicken.
  7. Cook over medium heat, covered, until the chicken is half done. While the chicken is cooking, wash the rice well soak rice for 5 minutes.
  8. Remove chicken and set aside to keep warm.  Add the soaked rice into the boiling stock along with chopped coriander and cook covered over low heat or until liquid is absorbed.
  9. Place the butter pieces on the top of the rice. Cover the pan and cook the kabsa rice on low flame for about 20-30 minutes.
  10. Brush the chicken with the left over spices and olive oil and grill in the oven until the chicken is golden brown.
  11. In a small pan add left over butter and fry raisins, and add to the top of the cooked kabsa rice.

    Now place the flavored rice in a serving platter with the grilled chicken pieces arranged on top of the rice.
    For side dish you can serve with halved onion, or DAQOUS.
  13. For daqous in a blender add 2 plum tomato, 1 chilli, few springs of coriander, ground pepper powder a pinch and salt to taste blend it and serve along with Arabic kabsa.

Chicken bbq

Prepare delicious mouthwatering and tasty Chicken  Bar-B-Q recipe to impress your friends and family.

INGREDIENTS :

  • Chicken-1 whole              
  • Yogurt-2 tbls
  • Oil-2 tbls
  • Lemon juice-4 tbls
  • Ginger garlic paste-2 tsp
  • Orange food color-1 pinch
  • Red chilli powder-1 tblsp
  • Garam masala-1 tbls
  • salt to taste

PREPARATION:

  1. Mix all the ingredients and coat the chicken with it.Marinate for 5 hours.
  2. You can also use some ready made BBQ Sauce for tangy and smoky flavour.
  3. Deep fry in oil,or in a tandoori oven. Can also bake in oven at 400 degree F or till done.
  4. In tandoori or grill place the marinated bar-b-q chicken pieces in skewers,and grill.
  5. Sprinkle lemon juice before serving. Delicious BBQ chicken is  ready to serve.
  6. Serve with raita, salad and plain naan.

Spicy Spaghetti

Spicy spaghetti recipe

Spicy spaghetti Sauce. Adding all spicy in pasta. Spicy spaghetti with garam masala.

INGREDIENTS:                                                  PASTA

  • Fresh boiled spaghetti-1 packet or as required
  • Chicken pieces-1/2 kg
  • Canned green peas- 1 cup
  • Potatoes (in slices): 1-2, like finger chips
  • Thin Carrot slices-1/2 cup
  • Green chilli- 4-5
  • Tomato paste- 3-4 tbsp
  • Garlic paste- 1 tbsp
  • Red chili powder- 1tbsp
  • Salt to taste
  • Cream cheese- 3-4 tbsp
  • Oil as required

PREPARATION:

  1. Heat oil in a pan,add garlic paste,followed by chili powder and salt.
  2. Saute a little,add chicken pieces,tomato paste,cook on low heat till the gravy thickens.
  3. Add all the veggies and cook.Add cream cheese,and remove from fire.
  4. Mix well add chopped cilantro for garnishing,you can either mix the spaghetti in the gravy,or dish out the sauce on top of the boiled hot spaghetti and garnish accordingly.Serve hot this yummy spaghetti…

VALENTINE LUNCH RECIPES

Chicken Risotto

INGREDIENTS:

  • Arborio Risotto- 100 Gm                          CHICKEN RISOTTO
  • Chicken julienne-4 tbsp
  • Chicken Breast- 1 Nos
  • Chopped Garlic- 5 Gm
  • Chopped Onions- 5 Gm
  • Salt To taste
  • Crushed Black Pepper- 5 Gm
  • Chicken Stock-1/2 Lt
  • Olive Oil- 100 Ml
  • Mushrooms- 20 Gm
  • Fresh Cream -2 tbls
  • Cheese- 20 Gm

PREPARATION:

  1. Cook Arborio Risotto rice (a fat, starchy, medium grain rice) on low heat with chicken stock for about 30 minutes or till done (Its high starch content is released in the slow cooking process, creating a creamy consistency).
  2. In a pan heat Olive oil and saute onion & garlic
  3. Add the Chicken Julienne’s in it and soaked sliced mushrooms and pepper.
  4. Add the Pre- cooked risotto and cook it further with some more chicken stock.
  5. Once cooked, add fresh cream & finish with chopped cilantro & grated cheese over it.
  6. Serve in a deep dish garnished with cheese.
  7. Melt 2 tablespoons of butter in a skillet over medium heat add chicken breast soaked in salt,pepper,chili,crushed garlic for about 30 minutes, and cook 3 minutes on each side or until done. Cut chicken lengthwise into slices,and serve on top with the risotto.

Chicken Pasta

INGREDIENTS:

  • Boneless,skinless chicken breasts-2 in nos    CHICKEN PASTA
  • Kosher salt-1/4 teaspoon
  • Freshly ground pepper-1/4 teaspoon
  • Canola oil-1 tablespoon
  • Green bell peppers, thinly sliced-2
  • Onion thinly sliced-1 large
  • Hot paprika-2 teaspoons
  • Crushed tomatoes-1 1/2 cups
  • Chicken broth-1/2 cup
  • Lemon juice-1 tablespoon
  • Sour cream-1/4 cup
  • Chopped fresh parsley-2 tablespoons
  • Boiled macaroni,pasta-2 cups

PREPARATION:

  1. Sprinkle chicken with salt and pepper.Heat oil in a pan and fry chicken on low heat,turning occasionally,until browned,3 to 5 minutes.Transfer to a plate.
  2. Add bell peppers and onion to the pan and cook,covered,over medium stirring occasionally, until cooked.Add paprika,tomatoes,broth and lemon juice.
  3. bring to a boil.Return the chicken to the pan; reduce heat.Spoon some sauce over the chicken and cook,turning occasionally, until the sauce is reduced and the chicken is cooked through,mix in the boiled pasta,and cook for two minutes.
  4. Remove from the heat,stir in sour cream.Sprinkle with parsley,and serve hot with salad .

CHEESE MACARONI

INGREDIENTS:                     cheese macaroni

  • Elbow Macaroni-100 gm
  • Cheese sauce-2 tblcp
  • Grated cheese-50 gm
  • Salt to taste
  • Pepper powder-1 tsp
  • Breadcrumbs-1 tblsp
  • Butter-25 gm

PREPARATION:

  1. Boil macaroni until cooked,but don’t overcook.Drain well.
  2. Add the cheese sauce,salt,pepper,mix well.Place this in a baking tray.
  3. Sprinkle grated cheese,breadcrumbs on top and drizzle with butter or margarine.
  4. Bake it for 25 minutes in a moderately hot oven on 200 degrees; bake it till crisp and golden, light brownish color.lasagna
  5. Serve with hot chili sauce or ketchup.You can also layer boiled lasagna (a type of pasta in sheets) at the bottom,middle and top layer(optional).In the middle you can add any grated chicken gravy as done in spiced spaghetti.And bake as same till golden crisp on top.

CHILLI CHICKEN RECIPE

THIS IS INDIAN STYLE OF PREPARING CHILI CHICKEN.

INGREDIENTS:

  • Chicken breast- 500 gm
  • Onions- 2 medium
  • Tomato- 1 medium
  • Ginger Garlic paste- 1 tsp
  • Kashmiri Chili powder- 1 tsp
  • Coriander powder- 1/2 tsp
  • Turmeric powder a pinch
  • Green Chili- 1
  • Salt to taste
  • Oil- 2 tsp
  • Coriander leaves-a handful chopped
  • Mint leaves- 5

Masala powder(seasoning):

  • Whole peppercorns- 2 tbsp
  • Coriander Seeds- 1/2 tsp
  • Cinnamon- 2″
  • Cloves- 2
  • Cardamom- 2
  • Fennel Seeds- 1/2 tsp

PREPARATION:

  1. Wash and cut chicken into medium size pieces.Add half of the ginger garlic paste,followed by chilly powder,turmeric powder,coriander powder, green chilly,salt and marinate for 30 min.
  2. Roast and grind the masala seasoning items to a smooth powder.
  3. Heat a pan add oil.Then saute onions till pink, add the rest of the ginger garlic paste,and fry a little.Then add finely chopped tomatoes and the mint leaves and half of the coriander leaves.Saute for few minutes,add salt,turmeric and simmer for 5 min.
  4. Now add the marinated chicken pieces.Cook on high for 5 min,with continuous stirring.
  5. Add the ground seasoning powder to the chicken and add 1/2 cup of water and simmer till chicken is tender.Pour 2 tsp of oil over the tender chicken and stir fry until each pieces looks separate.And also the oil starts separating. CHILI 1
  6. Finally garnish with the remaining coriander leaves.And serve this all time favorite side dish.
  7. You can also saute some onions, tomato, capsicum,stir fry and add as garnish at last.
