EGG OMELET

INGREDIENTS:         bread omelet1

  • Egg-4
  • Onion-2 med sized
  • Grated coconut-1 tbls
  • A small bunch of coriander
  • Green chilly-2
  • Tomato-1(thin sliced)
  • Chilly powder-1/2tbls
  • Salt to taste
  • Oil for frying

PREPARATION:

  1. Finely chop onion,green chilly,and coriander leaves.Take a bowl mix the chopped ones with chilly powder,salt,grated coconut,and the egg contents.Beat well till fluffy.
  2. Take a non-stick pan,pour oil all over evenly.Pour the egg mixture,and spread evenly.Cook on low flame.When its slightly roasted turn it over carefully.
  3. Cook for few more minutes,remove from fire and serve it hot, or by making it as a sandwich with bread slices,in this case you can fill sliced onion tomatoes and chopped coriander leaves freshly inside the omelet and bread or even lettuce leaves to get a crunchy bite.And toast this in a sandwich maker or a toaster.
  4. The bread gets compressed with the omelet as a filling in the center.
    This will be one of your kids favorite tiff-in box meal from now on.They will not leave a bit aside.
  5. Adding finely chopped vegetables along with this will give you a full nutritional meal for persons in diet and for the diabetic(can avoid coconut).
  6. By taking this sandwich in the morning with a glass of juice,will make your feel full throughout the day and you will not feel hungry.This helps much for your DIET. WEIGHT WATCHERS can use brown breads.

EGG CURRY

INGREDIENTS:

  • Boiled Eggs – 5              egg-gravy
  • Onion – 2 sliced egg-gravy
  • Green Chilly – 2
  • Garlic chopped – 1 tbls
  • Potatoes – 2
  • tomato – 2
  • Grated coconut – 1/2 cup
  • Jeera powder – 1 tbls
  • Black pepper – 1/2 tbs
  • Coriander Powder – 1 tbls
  • Chilly Powder – 1/2 tbs
  • Cloves – 4
  • Oil – 3 tbls
  • A bunch of coriander leaves

PREPARATION:

  1. Grind coconut , jeera, pepper , Garlic to a smooth paste.
  2. Cut the potatoes in to medium pieces. Cut the boiled eggs into half each.
  3. Heat Oil in pan add cloves,(or even garam masala powder) onions, green chilly stir well. Now add coriander powder and chilly powder fry for awhile. Add crushed tomato.Then add the potato pieces and two cups of water.
  4. Add the ground paste and salt to taste. Allow to boil till the gravy thickens. Add the egg pieces at last followed by chopped coriander leaves.
  5. Keep in low flame for five minutes. Serve hot this spicy egg curry with Rice or Naan.It is one of the famous chettinad recipe.Can also add the egg yolk while the gravy boils and simmer for 10 minutes or just add boiled eggs.Both ways tastes good for this egg curry.
