Vadai Recipe

Vadai,Vada also known as south Indian fritters (uzhundhu vadai) more or so look like doughnut, with same hole in the middle, but a savory dish made of lentils. Medhu Vadai or Medu Vada is a south Indian snack served along with coconut chutney, or mint coriander chutney.

Hot vadai dipped in hot sambhar is simply divine, is a famous breakfast easy recipe  snack. Keeping Vadai as base we can make many dishes ranging from sambhar vadai to curd vadai, Vadaicurry and the lists goes on. Vadai is crunchier on the outside and melts in mouth. Lets look on to the easy recipes ingredients and preparation of this easy south Indian fritters urad dal vadai ( ulundu vadai ) recipes.


  • Whole black gram dal – 1 cup   vadai recipes
  • Ginger juliens-1 tsp
  • Green chilli – 1
  • Whole pepper – 1/4 tsp
  • Curry leaves -1 sprig
  • Chopped onion – 2 tsp
  • Chopped coriander – 1 tsp
  • Rice powder -1 tsp
  • Salt to taste


Wash and soak the De-husked urad dal for about an hour. Grind the soaked urad dal with very little amount of water, 1 tsp is more than enough.

When the dal is grinded to a little coarse texture its done. Now add all the ingredients listed above to the batter. Mix well.

Heat enough amount of oil in a kadai let it come to full boiling point. Now take a plastic sheet, coat slightly with oil so that the batter doesn’t stick to your hands.

Now take a small ball sized batter,place over the plastic sheet, flatten it in the shape of doughnut,make a hole in the middle. Now transfer the flattened vadai, flip it fast in your hand then to the hot oil carefully.

When one side is cooked the vadais will automatically float on top of the oil. Turn them over, to the other side, and fry till golden brown.

Take it out and place it over tissue paper,as it will remove extra oil. Serve this dal fritters vadai with any chutney and sambhar. Idli Vadai recipes  is one of the famous south Indian starter and snack.

Kuzhi Paniyaram

Authentic Tamil Recipes of Kuzhi paniyaram

Kuzhi paniyaram also called Kuli Paniyaram. Kuzhi paniyaram  is a famous south Indian Tamil recipes and authentic chettinad rice recipe. Kuzhi paniyaram  is a easy great starter or snack recipe. Kuzhi paniyaram is prepared by using a special vessel paniyaram chatti. Kuzhi paniyaram can be prepared in two varieties sweetpaniyaram and karapaniyaram. Kuzhi paniyaram is a cake like spongy snack with a crispier outer layer.



For Batter:                   batter-idly-idli                

  • Idli rice -1 cup
  • Raw rice – 1 cup
  • Fenugreek seeds – 1/4 tsp
  • Urad dal – 1/4 cup
  • Salt – very little
  • Cooked rice – 2 handful


How to Prepare Batter:

  1. Soak both urad dal, fenugreek seeds together and rice separately for 7 hours. First grind dal to a smooth paste followed by cooked rice and soaked rice.
  2. Add salt, mix well and keep aside for about 12 hours for fermenting. With this batter you can prepare both SWEET PANIYARAM and KARA PANIYARAM.


INGREDIENTS:                      kuzhi paniyaram

  • Mustard seed – 1/4 tsp
  • Urad dal- 1/2 tsp
  • Curry leaves – 1 tsp
  • Chopped onions – 2 tsp
  • Green chilli – 2 pcs
  • Grated coconut – 2 tsp


  1. In a frying pan add one table spoon oil, when it is hot add the mustard seed followed by urad dal, curry leaves, onion, chilli and finally grated coconut fry for a minute.
  2. Add this  mixture to the batter and mix well.
  3. In the Kuzhi paniyaram pan rub each hole with few drops of oil. When it is slightly hot pour the batter in each hole, close the lid and let it cook for two minutes.
  4. Open the lid turn the balls to the other side using paniyaram stick and cook for another two minutes.
  5. This has to be done in slow to medium flame.
  6. Serve this hot spicy paniyaram with any chutneys.


INGREDIENTS:     Kuzhi-paniyaram

  • Jaggery – 1 cup
  • Cardamom powder – 1/2 teaspoon





  1. For the jaggery syrup add the powdered jaggery, cardamon powder with half cup of water boil for 5 minutes to get a thick syrup.
  2. To the above prepared paniyaram batter add the jaggery syrup.
  3. In the kulipaniyaram or Kuzhi paniyaram pan rub each hole with few drops of oil. when it is slightly hot pour the batter in each hole close the lid and let it cook for two minutes.
  4. Open the lid turn the balls to the other side using paniyaram stick and cook for another two minutes.
  5. Kuzhi paniyaram has to be done in slow to medium flame.
    Enjoy the sweet paniyaram.
  6. You can also use Idly batter or Aappam batter for this easy recipes of kulipaniyaram.

  • Cabbage, finely shredded-4 cups
  • Carrot finely grated-1cup
  • Skim yogurt-1/2 cup
  • Mayonnaise-4 tblsp
  • Fresh cream-4 tblsp
  • Sugar-1 1/2 tbsp
  • Salt to taste

Spring Rolls

Homemade spring rolls is a unique style appetizer with variety of fillings based on their country and origin.It is very crispy from outside with crunchy vegetables or meat inside.The beauty of spring rolls is that you can add any filling of  Ur choice like thin slices of vegetables and much more…


For the Dough:

  • All purpose flour – 1/2 cup
  • Semolina flour – 1/4 cup(Optional)
  • Oil – 1 1/2 Tbsp
  • Salt – 1/4 Tsp
  • Lukewarm water – 1/4 cup

For the Filling:

  • Potato – 2 large
  • Green chillies – 1 chopped
  • Green peas – 1/4 cup
  • Cumin seeds – 1/2 tsp
  • Coriander powder – 1 tsp
  • Garam masala – 1/4 tsp
  • Mango powder – 1 tsp
  • Salt to taste



  1. Mix flour, salt and oil together and knead to make a soft dough.
  2. Cover it with damp cloth and leave it aside for 30 minutes.
  3. Can also use ready made spring roll  sheets .


  1. Boil potatoes and cut them into small pieces.
  2. Crackle cumin seeds in hot oil.
  3. Add chopped chillies, coriander powder and stir nicely.
  4. Add green peas and cook till they get tender.
  5. Add the potato pieces and mash it well .Cook for 5 minutes.
  6. Add garam masala , amchur(mango) powder and salt.
  7. Mix well and add  seasoning according to taste.

Making Spring rolls:

  1. Before filling the rolls prepare a paste by mixing 1tbsp all – purpose flour and 2 tbsp water and keep it aside.
  2. Knead the dough and divide them into  balls. Roll each ball into thin slices and cut it to form a rectangle.Similarly make with all the dough balls.
  3. Now fill it with potato mixture and covering the both ends roll it tightly and seal with the flour mixture prepared can also make slithers of any vegetables like cabbage, carrot,and stir fry with spices and use as filling, and also bits of chicken fried with any spices of your choice,make it sure it is dry to fill in the dough.
  4. Repeat the same step with other spring roll sheets.
  5. Heat oil in a pan to medium heat and when the oil is hot enough, place the rolls  in the hot oil.
  6. Fry the spring rolls till they are golden brown in color and they are ready to serve with any sauce or chutney.

This homemade authentic Indian pickle serves as a good accompaniment for any simple dishes.


  • Lemon-1 kg
  • Black salt-3 tsp
  • Salt-150 gm
  • Ground black pepper-1 1/2 tsp
  • Cloves-2 tsp(optional)


  1. Grind all ingredients,except the lemons.

INGREDIENTS: banana raita

  • Ripe Bananas-3
  • Yogurt-2 cup
  • Mustard or cinnamon Powder-1/2 tsp
  • Sugar-1 tsp
  • Green Chillies -2
  • Salt -As required


Cut the bananas into small pieces.Slit the green chillies.

Beat the yogurt in a blender.Mix the yogurt with all the remaining ingredients thoroughly.
