CHILLI CHICKEN RECIPE

THIS IS INDIAN STYLE OF PREPARING CHILI CHICKEN.

INGREDIENTS:

  • Chicken breast- 500 gm
  • Onions- 2 medium
  • Tomato- 1 medium
  • Ginger Garlic paste- 1 tsp
  • Kashmiri Chili powder- 1 tsp
  • Coriander powder- 1/2 tsp
  • Turmeric powder a pinch
  • Green Chili- 1
  • Salt to taste
  • Oil- 2 tsp
  • Coriander leaves-a handful chopped
  • Mint leaves- 5

Masala powder(seasoning):

  • Whole peppercorns- 2 tbsp
  • Coriander Seeds- 1/2 tsp
  • Cinnamon- 2″
  • Cloves- 2
  • Cardamom- 2
  • Fennel Seeds- 1/2 tsp

PREPARATION:

  1. Wash and cut chicken into medium size pieces.Add half of the ginger garlic paste,followed by chilly powder,turmeric powder,coriander powder, green chilly,salt and marinate for 30 min.
  2. Roast and grind the masala seasoning items to a smooth powder.
  3. Heat a pan add oil.Then saute onions till pink, add the rest of the ginger garlic paste,and fry a little.Then add finely chopped tomatoes and the mint leaves and half of the coriander leaves.Saute for few minutes,add salt,turmeric and simmer for 5 min.
  4. Now add the marinated chicken pieces.Cook on high for 5 min,with continuous stirring.
  5. Add the ground seasoning powder to the chicken and add 1/2 cup of water and simmer till chicken is tender.Pour 2 tsp of oil over the tender chicken and stir fry until each pieces looks separate.And also the oil starts separating. CHILI 1
  6. Finally garnish with the remaining coriander leaves.And serve this all time favorite side dish.
  7. You can also saute some onions, tomato, capsicum,stir fry and add as garnish at last.

CAULIFLOWER ROASTED

Crunchy and delicious cauliflower 65 is all time favorite of our little friends, kids who often do not want either to see the classic, boiled form of this vegetable.

A favorite week-night cauliflower recipe. Tiny florets of pan-fried cauliflower are tossed with masalas and deep fried.It can also be roasted in oven.

This method of preparing cauliflower is very simple and extremely delicious and you will start eating it when it comes out of the oven all golden.Try this recipe and you’ll never make cauliflower any other way.

INGREDIENTS:

  • 1 whole Cauliflower- cut into florets    cauliflower roasted fry
  • Gram Flour – 1 cup
  • Rice Flour – 2 tbs
  • Garlic powder-1/4 tsp
  • Red Chilly Powder – 1 tsp
  • Aginamotto-1/4 tsp
  • Turmeric powder-1/4 tsp
  • Egg yolk-1
  • Tandoori masala-2 tbs
  • Cumin powder-1/4 tsp
  • Garam masala-1/4 tsp
  • Salt to taste
  • Oil to deep fry

PREPARATION:

  1. Soak the cauliflower florets in warm water with a pinch of salt.
  2. In a bowl, mix the flours, red chilly powder, turmeric,cumin,tandoori masala, garam masala,egg,aginamotto , salt, add water and make a batter.
  3. Make sure lumps are not formed and the florets are covered well with the batter.
  4. Heat oil in a kadai to deep fry.Dip the florets in the batter and deep fry in oil,until it  becomes golden red.You can also roast it in oven till crisp and golden.
  5. Remove from fire and put in a plate with absorbent paper.
  6. Serve immediately.Serve as side-dish for pulao or as a starter with tomato ketchup for best taste,or a simple yogurt dip…

POTATO PATTIES

Potato cutlets are surprisingly easy make and all the ingredients that are required to make the cutlets are found in all kitchens.Potato Cutlets can be really yummy, easy to make, filling and light.

INGREDIENTS:

  • Mashed potatoes-2 cups            POTATO PATTIES
  • Margarine-10 gm
  • Any legume sprouts-1/2 cup
  • Brussel sprout-100 gm
  • Flour-3 tbls
  • Salt to taste
  • Pepper powder-1/4 tsp
  • Spring onion finely chopped-1
  • Oil for frying

PREPARATION:

  1. Mash the boiled potatoes with margarine(vegetable ghee),along with salt,pepper,and spring onion.
  2. Pat dry the sprouts(can make from any lentils) and add it to the mixture.
  3. Cook the brussels in salted water for 5 minutes then drain.When cool grate it and add to the potato mixture.       brusselssprouts
  4. Oil hand and make small ball shapped patties,dredge with flour on top.
  5. Heat oil in a pan ,fry the patties in medium heat until golden brown.THIS IS A VEGAN STYLE OF PREPARATION.
  6. To get the Indian touch add Garam Masala,little curry powder,a pinch of turmeric powder,and mashed bread to make the potato patties,can avoid Brussels and add more legumes made from any fresh or dried beans, pulses,lentils,peas etc. in this preparation.This tastes best as a evening snack .

VEGETARIAN POT PIE

INGREDIENTS:

  • 6 cup Assorted Vegetables         VEGETARIAN POT PIE
  • (bell peppers,carrot,celery,
  • beans,peas,potatoes,spinach,
  • zucchini,onion,tomato)
  • Veg stock-1 cup
  • Minced garlic-1
  • Fresh parsley-2 tsp
  • Salt-1tsp
  • Soy sauce-1 tsp
  • Pepper powder-1/4 tsp
  • Ready made pie crust dough
  • Flour-1/4 tsp

PREPARATION:

  1. Melt some butter in a pan,add minced garlic saute a little.Followed by any six veggies of  Ur choice,finely chopped.Stir frequently every 5 minutes.cook on low flame.
  2. Sprinkle flour on top,cook stirring constantly.Gradually add the warm veg stock,cook ,until the vegetables are tender and the sauce has thickened.
  3. Now add salt,pepper,soy sauce,parsley,fresh coriander leaves.
  4. Roll one pie crust to the bottom of the casserole poke holes with a folk.Transfer the vegetables to dish .
  5. Roll in circles larger than the size of the baking casserole.Lay it on top of the vegetables,and cover it.DON’T seal the edges.Can also sprinkle some mozzarella cheese as a molding agent,to give the dish a chewiness.
  6. Pinch the two crusts together with a fork or by squeezing a little bit of the dough together all around the pot pie.
  7. Preheat the oven to 400 degree.Place the dish in the oven,until the crust is golden brown,it may take around 20-30 minutes.     POT 2
  8. Serve with any dips under salads &dips category.And enjoy the whole full meal snack for the evening.Especially forkids returning from school,it is a good energy supplement after the whole day.
    You can also design the crust just to attract the kids,like making small pot pies by preparing the dish in small porcelain cups.They just love eating food as snacks but not in plates,as we mom insist them,they are just kids leave them of their own interest ,and make them eat healthy through their own way.

SPICED GRAINS PANCAKE

INGREDIENTS:

  • Oats-1 cup
  • Wheatgerm toasted-1/2 cup
  • Milk-1 cup
  • Egg-1
  • Flour-3/4 cup
  • Baking powder-1tsp
  • Ginger powder or julienns-1 1/4 tsp
  • Cinnamon powder-1 1/4 tsp
  • Ground cloves-1/2 tsp
  • Salt-1 tsp
  • Coriander a few springs
  • Oil for cooking

PREPARATION:

  1. Blend all the ingredients in a blender.Add chopped coriander(even few thin slices of onions,its on your choice)
  2. Heat a non-stick tawa.Brush it with some oil,pour the batter in the center of the pan and rotate the tawa to form a pan cake.
  3. Cook until bubbles appear and undersides are slight brown.After a minute or so flip it to the other side with a spatula.
  4. Sprinkle little oil around the sides.
  5. And cook until golden brown. Serve this dish with any chutneys or dips of your choice given under salads and dips.

FRUITY SALAD

Fruits are rich in carbohydrates and a good source of vitamin c,its regular intake is must
in any form or such as salads or a dessert.

INGREDIENTS:

  • Red apple-1
  • Green apple-1                   FRUIT SALAD
  • Guava-1
  • Orange-1
  • Strawberry-10
  • Grapes-10
  • Berry-8
  • Cheese cubes-2

DRESSING:

  • Hung yogurt-1/2 cup
  • Chaat masala-2 tsp
  • Orange juice-2tbsp
  • Curry powder-1/2 tsp
  • Orange rind-1tsp
  • Salt to taste
  • Pepper to taste

PREPARATION:

  1. Dice the apples,don’t peel the skin.Remove seeds from guava and dice it too.
  2. Segment the orange without skin.Cut the cheese cubes in small bits.
  3. Clean the strawberries,grapes.
  4. Place the fruits decoratively in a serving bowl.Refrigerate it .
  5. Mix the dressing ingredients together and refrigerate separately until serving.
  6. Before serving pour the dressing over the fruits,and mix a little.
