VEGETARIAN POT PIE

INGREDIENTS:

  • 6 cup Assorted Vegetables         VEGETARIAN POT PIE
  • (bell peppers,carrot,celery,
  • beans,peas,potatoes,spinach,
  • zucchini,onion,tomato)
  • Veg stock-1 cup
  • Minced garlic-1
  • Fresh parsley-2 tsp
  • Salt-1tsp
  • Soy sauce-1 tsp
  • Pepper powder-1/4 tsp
  • Ready made pie crust dough
  • Flour-1/4 tsp

PREPARATION:

  1. Melt some butter in a pan,add minced garlic saute a little.Followed by any six veggies of  Ur choice,finely chopped.Stir frequently every 5 minutes.cook on low flame.
  2. Sprinkle flour on top,cook stirring constantly.Gradually add the warm veg stock,cook ,until the vegetables are tender and the sauce has thickened.
  3. Now add salt,pepper,soy sauce,parsley,fresh coriander leaves.
  4. Roll one pie crust to the bottom of the casserole poke holes with a folk.Transfer the vegetables to dish .
  5. Roll in circles larger than the size of the baking casserole.Lay it on top of the vegetables,and cover it.DON’T seal the edges.Can also sprinkle some mozzarella cheese as a molding agent,to give the dish a chewiness.
  6. Pinch the two crusts together with a fork or by squeezing a little bit of the dough together all around the pot pie.
  7. Preheat the oven to 400 degree.Place the dish in the oven,until the crust is golden brown,it may take around 20-30 minutes.     POT 2
  8. Serve with any dips under salads &dips category.And enjoy the whole full meal snack for the evening.Especially forkids returning from school,it is a good energy supplement after the whole day.
    You can also design the crust just to attract the kids,like making small pot pies by preparing the dish in small porcelain cups.They just love eating food as snacks but not in plates,as we mom insist them,they are just kids leave them of their own interest ,and make them eat healthy through their own way.

SPICED GRAINS PANCAKE

INGREDIENTS:

  • Oats-1 cup
  • Wheatgerm toasted-1/2 cup
  • Milk-1 cup
  • Egg-1
  • Flour-3/4 cup
  • Baking powder-1tsp
  • Ginger powder or julienns-1 1/4 tsp
  • Cinnamon powder-1 1/4 tsp
  • Ground cloves-1/2 tsp
  • Salt-1 tsp
  • Coriander a few springs
  • Oil for cooking

PREPARATION:

  1. Blend all the ingredients in a blender.Add chopped coriander(even few thin slices of onions,its on your choice)
  2. Heat a non-stick tawa.Brush it with some oil,pour the batter in the center of the pan and rotate the tawa to form a pan cake.
  3. Cook until bubbles appear and undersides are slight brown.After a minute or so flip it to the other side with a spatula.
  4. Sprinkle little oil around the sides.
  5. And cook until golden brown. Serve this dish with any chutneys or dips of your choice given under salads and dips.

FRUITY SALAD

Fruits are rich in carbohydrates and a good source of vitamin c,its regular intake is must
in any form or such as salads or a dessert.

INGREDIENTS:

  • Red apple-1
  • Green apple-1                   FRUIT SALAD
  • Guava-1
  • Orange-1
  • Strawberry-10
  • Grapes-10
  • Berry-8
  • Cheese cubes-2

DRESSING:

  • Hung yogurt-1/2 cup
  • Chaat masala-2 tsp
  • Orange juice-2tbsp
  • Curry powder-1/2 tsp
  • Orange rind-1tsp
  • Salt to taste
  • Pepper to taste

PREPARATION:

  1. Dice the apples,don’t peel the skin.Remove seeds from guava and dice it too.
  2. Segment the orange without skin.Cut the cheese cubes in small bits.
  3. Clean the strawberries,grapes.
  4. Place the fruits decoratively in a serving bowl.Refrigerate it .
  5. Mix the dressing ingredients together and refrigerate separately until serving.
  6. Before serving pour the dressing over the fruits,and mix a little.

EGG OMELET

INGREDIENTS:         bread omelet1

  • Egg-4
  • Onion-2 med sized
  • Grated coconut-1 tbls
  • A small bunch of coriander
  • Green chilly-2
  • Tomato-1(thin sliced)
  • Chilly powder-1/2tbls
  • Salt to taste
  • Oil for frying

PREPARATION:

  1. Finely chop onion,green chilly,and coriander leaves.Take a bowl mix the chopped ones with chilly powder,salt,grated coconut,and the egg contents.Beat well till fluffy.
  2. Take a non-stick pan,pour oil all over evenly.Pour the egg mixture,and spread evenly.Cook on low flame.When its slightly roasted turn it over carefully.
  3. Cook for few more minutes,remove from fire and serve it hot, or by making it as a sandwich with bread slices,in this case you can fill sliced onion tomatoes and chopped coriander leaves freshly inside the omelet and bread or even lettuce leaves to get a crunchy bite.And toast this in a sandwich maker or a toaster.
  4. The bread gets compressed with the omelet as a filling in the center.
    This will be one of your kids favorite tiff-in box meal from now on.They will not leave a bit aside.
  5. Adding finely chopped vegetables along with this will give you a full nutritional meal for persons in diet and for the diabetic(can avoid coconut).
  6. By taking this sandwich in the morning with a glass of juice,will make your feel full throughout the day and you will not feel hungry.This helps much for your DIET. WEIGHT WATCHERS can use brown breads.

HOT & CRISP SAMOSA

INGREDIENTS:

  • Left over chappati -5
  • Oil for frying

STUFFING:

  • Potato-3
  • Sliced onion-1
  • Curry leaves-a few
  • Tomato-1
  • Ginger garlic paste-1/2 tbls
  • Turmeric powder-1/4 teaspoon
  • Chilly powder-1/4tbls
  • Mustard seeds-1/4 tbls
  • Jeera powder-1/4 tbls
  • A bunch of coriander leaves

PREPARATION:

  1. Boil potato and mash it well.In a pan  heat oil, add mustard seeds,when it splutters,add curry leaves and onion,followed by mashed tomato and ginger garlic paste.Now add all the powders and stir fry a second. Add the mashed potatoes and salt to taste.Mix well along with chopped coriander leaves. keep it aside to cool.
  2. You  can use the left out chappati or even tortillas for this samosa. Make a thick paste of gram flour as a binding ingredient.
  3. Cut the chappati into half circle .Keep the stuffing masala in the center,Fold it in triangle shape paste it with the gram flour mixture.
  4. In a nonstick pan sprinkle oil,place the samosas and fry until it is hot and crispy,slightly brownish on both sides.Serve it hot with the Mint chutney(recipe under salads & dips).
  5. Calso use the ready made  samosa dough available in all super markets.Fill it with the mixture and roll firmly in triangle shape .Deep fry this in oil or microwave if you are in no oil diet.Have it as a healthy snack.
  6. This will be a good snack at all times and loved by kids as a tiff-en box meal.you can also use different stuffing’s using mixed vegetables,grated cheese,panneer,anything on your own imagination…and just enjoy the hot snack on a rainy evening.It will be delectable and delicious.

AMERICAN STUFFED PAN CAKE

INGREDIENTS:

  • Plain flour(maida)-1/4 kg
  • Egg-3
  • Salt -a pinch
  • Grated coconut-2 tbls
  • Sugar-150 gm
  • Refined oil
  • Cardamom powder-2 pinch

PREPARATION:

Take a bowl,and mix the egg contents with flour and salt.Add enough water till the batter is of pouring consistency.
Mix the grated coconut,sugar and cardamom powder in a separate vessel and keep aside.
Heat the pan,smear oil all over.
Pour a large spoon full of batter to the pan,and spread to a round shape(very thin layer).Close the pan with a lid and cook.When its done,put a spoon full of the coconut mixture in the center and spread.
Now roll this tightly and pin with a toothpick.Serve hot or cold.The cardamom coconut flavor will be simply delicious,in this American pancake.
