VEGETABLE SHORBA (VEG SOUP)

INGREDIENTS:

  • Potato, Onion, Carrot-2 in no’svegetable-soup
  • Beans-10 in no’s
  • Shredded Cabbage-100 gm
  • Tomato puree-1cup
  • Water-7cups
  • Pepper and salt to taste
  • Milk-1/2 cup (optional)
  • Spring onion-a few
  • Sweet corn-3 tbls

PREPARATION:

  1. Cook all the vegetables along with water in a pressure cooker(for 2 to 3 whistles)(except sweet corn you can at last boil) till it gets soft.
  2. Remove and cool .Blend the cooked vegetables in a mixer and strain the stock.
  3. Add the vegetable stock in a pan along with tomato puree and boil well till raw smell goes.
  4. Season with salt and pepper .Add the milk and close the lid. Allow the soup to boil in low flame for a min. Add chopped coriander leaves. You can also garnish with sprouted beans, grated cheese or with toasted bread. Serve it hot. THIS IS WORTH A SUMPTUOUS MEAL. You will never feel hungry. This shourba(soup)is mainly taken for persons dieting and even for diabetic patients, who always feel hungry .This is a good meal for them……can also add boiled lentils,shredded chicken,and even mashed dals and enrich the soup with great flavors,have it hot in winter seasons.

BEETROOT SOUP

INGREDIENTS:

  • Beetroot-2 med sized
  • Carrot-1
  • Capsicum-1
  • Onion small -1
  • Pepper powder-1/4 tbls
  • Salt to taste

PREPARATION:

Scrape the skin from the beetroot,carrot and grate nicely.
Cut capsicum and onion into small pieces.
Boil all these vegetables in 4 cups of water,till it becomes soft.
To this add salt and pepper.If you want as in drinking consistency you can grind this,or else leave as such.You can also season with a stock cube for extra flavor.
Serve hot with grated paneer or cheese on top.This is the best healthy soup,with full richness of vitamins and iron.

Carrot Milk Shake

GET COOL IN THIS SUMMER:

INGREDIENTS:

  • Grated carrot 1 cup
  • Full Fat milk 1 1/2
  • sugar 2 tbls
  • Saffron a pinch

PREPARATION:

Put carrot and sugar in a food processor and grind it ,pour the milk  and grind it. Now extract the Juice add saffron and serve it chilled with lots of ice cubes,with a fresh mint leaf on top….Simple and Healthy. Quench your thirst in this summer with carrot milk shake.

CARROT SOUP

INGREDIENTS:

  • Carrot-4
  • Yogurt-1cup
  • Green chilli-1
  • A few springs of coriander leaves
  • Asafoetida powder – 2 pinch.
  • Jeera powder-1/4 teaspoon
  • Salt-for taste

PREPARATION:

Grind carrot in a mixer along with 1/2 cup of water and strain it.
To this carrot juice mix the beated yogurt and green chili and grind it once again, to a smooth batter. Now add the two masala powders, salt and chopped coriander.
Mix well until all the ingredients blend together. And serve it
Vegetables like carrot are rich in vitamins and antioxidants, we can gain this more only when it is eaten raw rather than cooked. So start the day with a healthy fresh vegetable carrot soup and get refreshing energy throughout the day.
