Kuzhi-paniyaram

 Keema Paniyaram ( Crispy Spongy like Muffin )  is a wonderful evening snack for school going kids. Paniyaram will be a  more willing food for kids when made with a slight twist in this recipe. For my kids I simply prepared chicken keema with minced onions, little ginger garlic paste, finely chopped chili, garam masala, curry powder, salt, cook everything and finally garnish it with chopped mint and coriander. Add this Keema mixture to the batter ,slightly fold it and use the same process of making Paniyaram.

This KEEMA PANIYARAM is simply a killer tiffin box recipe, your kids would definitely love it.

Sweet Kheer

Vermicelli Sago Kheer

Tiny pearls of sago with translucent vermicelli sweetened with milk and sugar is Vermicelli Sago SWEET KHEER. The bubbles simply float through your mouth as a surprise. This sago (tapioca) porridge is rich and creamy, divine after a Main course. Vietnamese prepare this with thick coconut milk. It is a famous Moroccan dessert too with flavor of orange blossom and cinnamon.

This thickens when cool so you can add extra milk or simply serve the thick vermicelli sago pudding chilled topped with vanilla ice cream will be yummy for all the sweet tooth people around. The various variety of this SWEET KHEER dessert available is too much to resist. Sweet Kheer made of broken rice,badam,with fruitmix, semolina,the variety goes on .

In south it is called payasam, semiya payasam, javarisi payasam. In north it is well known as MITA KHEER. Enjoy the taste of EasyRecipes sweetness made by Mrs.Shafeena Rasheed at a home party.

INGREDIENTS for Sweet Kheer

  • Vermicelli – 1 cup                    vermicelli-sago porridge-sweet-kheer
  • Sago/Sabudana -1/4 cup
  • Milk- 5 cups
  • Sugar – 1 cup
  • Cashew – 10 nos
  • Raisins – 10 nos
  • Cardamom powder – 1 tsp
  • Ghee -2 tsp
  • Condensed Milk -1/2 cup
  • Crushed Badam to decorate
  • Orange blossom water – optional.
  • Thick Coconut milk- 1/4 cup- optional.

PREPARATION of Sweet Kheer

  1. Soak sago in water for 15 minutes. In a hard bottomed vessel, heat ghee add cashew raisins, till nice light golden brown. Keep it aside.
  2. To a vessel add milk and allow to boil. When milk starts boiling add soaked sabudana, cook for a minute, then followed by slightly roasted vermicelli.
  3. Do not overcook vermicelli as this will lead to clogging of the Payasam. Cook until the sago becomes transparent.
  4. Add sugar mix well, till it dissolves, add cardamom powder and stir well.
  5. Add the golden fried cashew and raisins in ghee to the Sweet kheer, mix well and the Vermicelli Sago Kheer is ready, add little saffron, crushed to the Sweet kheer, for extra flavor.
  6. A festival recipe easy to make for any special occasions like Pongal, diwali and Eid. This is one of everyone’s favorite recipe in any Indian family, Mothers special dessert.
  7. It is an important dessert in any festive occasions,some love to taste this delicious dessert with Pappad, any savor snacks like Vada, puffed poori with kheer is a divine combination, one cannot forget that combination.
  8. Adding sweetened condensed milk will make it taste like milk pudding, coarsely powdered cashew will give a crunchy taste to the Vermicelli Payasam.

Kuzhi Paniyaram

Authentic Tamil Recipes of Kuzhi paniyaram

Kuzhi paniyaram also called Kuli Paniyaram. Kuzhi paniyaram  is a famous south Indian Tamil recipes and authentic chettinad rice recipe. Kuzhi paniyaram  is a easy great starter or snack recipe. Kuzhi paniyaram is prepared by using a special vessel paniyaram chatti. Kuzhi paniyaram can be prepared in two varieties sweetpaniyaram and karapaniyaram. Kuzhi paniyaram is a cake like spongy snack with a crispier outer layer.

INGREDIENTS for KUZHI PANIYARAM

For Batter:                   batter-idly-idli                

  • Idli rice -1 cup
  • Raw rice – 1 cup
  • Fenugreek seeds – 1/4 tsp
  • Urad dal – 1/4 cup
  • Salt – very little
  • Cooked rice – 2 handful

 

How to Prepare Batter:

  1. Soak both urad dal, fenugreek seeds together and rice separately for 7 hours. First grind dal to a smooth paste followed by cooked rice and soaked rice.
  2. Add salt, mix well and keep aside for about 12 hours for fermenting. With this batter you can prepare both SWEET PANIYARAM and KARA PANIYARAM.

PREPARATION of KARA PANIYARAM :

INGREDIENTS:                      kuzhi paniyaram

  • Mustard seed – 1/4 tsp
  • Urad dal- 1/2 tsp
  • Curry leaves – 1 tsp
  • Chopped onions – 2 tsp
  • Green chilli – 2 pcs
  • Grated coconut – 2 tsp

PREPARATION:

  1. In a frying pan add one table spoon oil, when it is hot add the mustard seed followed by urad dal, curry leaves, onion, chilli and finally grated coconut fry for a minute.
  2. Add this  mixture to the batter and mix well.
  3. In the Kuzhi paniyaram pan rub each hole with few drops of oil. When it is slightly hot pour the batter in each hole, close the lid and let it cook for two minutes.
  4. Open the lid turn the balls to the other side using paniyaram stick and cook for another two minutes.
  5. This has to be done in slow to medium flame.
  6. Serve this hot spicy paniyaram with any chutneys.

PREPARATION of  SWEET PANIYARAM

INGREDIENTS:     Kuzhi-paniyaram

  • Jaggery – 1 cup
  • Cardamom powder – 1/2 teaspoon

 

 

 

PREPARATION:

  1. For the jaggery syrup add the powdered jaggery, cardamon powder with half cup of water boil for 5 minutes to get a thick syrup.
  2. To the above prepared paniyaram batter add the jaggery syrup.
  3. In the kulipaniyaram or Kuzhi paniyaram pan rub each hole with few drops of oil. when it is slightly hot pour the batter in each hole close the lid and let it cook for two minutes.
  4. Open the lid turn the balls to the other side using paniyaram stick and cook for another two minutes.
  5. Kuzhi paniyaram has to be done in slow to medium flame.
    Enjoy the sweet paniyaram.
  6. You can also use Idly batter or Aappam batter for this easy recipes of kulipaniyaram.
  7. Making of the kuli paniyaram is so easy and very simple.
    Kuzhi paniyaram is simply delicious when served hot and crispy.
  8. Always cook on medium flame. So that Kuzhi paniyaram will be crispier outside with well cooked sponges inside.
  9. SWEET PASTA

INGREDIENTS:                                

  • Vermicelli (fine pasta] – 1/2 cups
  • Milk – 3 cups
  • Sugar – 5 Tbsp
  • Cardamom powder – 1/2 tsp
  • Raisins, Cashew nuts – 1/4 cup
  • Pure Ghee – 1 tsp

PREPARATION:

  1. Melt ghee in a pan and fry vermicelli till light brown color and keep aside.
  2. In the same pan fry raisins and cashew nuts.
  3. Bring milk to boil in a pan. Add vermicelli (pasta) reduce the heat and keep stirring in between.
  4. Cook for 4-5 minutes or until the vermicelli turns soft.
  5. Add sugar, raisins, cashew nuts and cardamom powder.
  6. When it cools the pudding gets thick, add more milk for your  desired consistency. You can also add condensed milk for  a thick delicious dessert  sweet pasta.
