GULAB JAMUN

Gulab jamun is a dessert which is popular throughout the Indian Subcontinent.It is a melt-in-the-mouth dessert,and it is most relishing after a sumptuous meal.Gulab Jamun is a sweet ball made of khoya,deep fried and served in sugar syrup.

Here is a simple and modern easy way of making soft,tasty,spongy and delicious gulab jamuns.It is a perfect dessert for any occasion – wedding, birthday party or a romantic dinner.

An unbelievable combination is hot, hot Gulab Jamuns with cold, cold Ice Cream,just thinking about it makes our mouth watery…..

INGREDIENTS:

  • Instant Milk Powder– 1/2 cup           gulab jamun new
  • All Purpose Flour – 2 tbsp
  • Yogurt – 2 tbsp
  • Baking Soda – 1/4 tsp
  • Water – 2 cups
  • Sugar – 2 cups
  • Butter – 1 tbsp
  • Rose Essence – few drops
  • Cardamon Powder – 1/2 tsp
  • Saffron – few strands, optional
  • Oil – for deep frying

PREPARATION:

  1. Prepare a syrup of sugar and water to one-string consistency and add rose water,cardamon,saffron.
  2. For the dumpling, in a mixing bowl , add in all dry ingredients ,Instant Dry Milk , All Purpose Flour, Baking Soda.
  3. Mix well along with the Butter and after that slowly start mixing in the yogurt. Make into a dough.leave it for 5 minutes.
  4. Divide the dough into small balls,the balls must be smooth without any creases. and deep-fry them on a slow fire till they turn dark golden brown, take them out into a paper towel.
  5. Carefully drop 3-4 dumplings at a time  in the oil and keep rotating them for an even color.
  6. Bring the syrup to another quick boil and drop in the dumplings.Turn off the flame and leave the Gulab Jamuns  to soak in the syrup for 45 minutes to an hour.
    Gulab jamuns can be served hot or cold.

CHOCOLATE JELLY DESSERT

INGREDIENTS:

  • Milk-800 ml                   CHOCO CUSTARD
  • Sugar-2tbsp
  • Cocoa powder-2 tbsp
  • Vanilla essence-1/4 tsp
  • Gelatine-2 tsp
  • Hung curd-2tsp

PREPARATION:

  1. Boil the milk in a pan.
  2. Mix cocoa powder,vanilla, sugar separately with little milk.Mix it well until it gets to a smooth paste without any lumps.
  3. Pour this mixture to the milk and bring to a boil.
  4. Remove from heat,sprinkle the gelatin and whisk well.
  5. Change it to a serving bowl and refrigerate to set.
  6. Before serving drizzle it with some hung curd on top.

The curd compliments beautifully to the chocolate dessert.You can also decorate more with almond chips.

INGREDIENTS:

  • Red apple-1
  • Green apple-1                   FRUIT SALAD
  • Guava-1
  • Orange-1
  • Strawberry-10
  • Grapes-10
  • Berry-8
  • Cheese cubes-2

DRESSING:

  • Hung yogurt-1/2 cup
  • Chaat masala-2 tsp
  • Orange juice-2tbsp
  • Curry powder-1/2 tsp
  • Orange rind-1tsp
  • Salt to taste
  • Pepper to taste

PREPARATION:

  1. Dice the apples,don’t peel the skin.Remove seeds from guava and dice it too.
  2. Segment the orange without skin.Cut the cheese cubes in small bits.
  3. Clean the strawberries,grapes.
  4. Place the fruits decoratively in a serving bowl.Refrigerate it .
  5. Mix the dressing ingredients together and refrigerate separately until serving.
  6. Before serving pour the dressing over the fruits,and mix a little.

INGREDIENTS:

  • Agar agar powder or flakes -5 tbspagar agar 1
  • Milk -4 cups
  • Any color  -1 pinch
  • Sugar to taste
  • Rose essence-1 tsp

PREPARATION:

  1. Soak agar agar in milk,for5 minutes.
  2. Once it starts boiling,simmer the flame,and stir constantly till the china grass gets dissolved to avoid sticking in the bottom of the vessel.
  3. Add sugar, essence, color, mix well and pour it into molding dish or a flat based tray.
  4. Let it set for 2 hours in the refrigerator. Serve Chilled.
  5. You can also make this set in different molds and designs of your imagination,by making layers.

This special Christmas dish is named after its brown color and one of Americas famous recipe....


INGREDIENTS:

  • All purpose flour-1 cupx-mas-brownies-chocolate
  • Vanilla powder-1 1/2 tsp
  • Egg-3
  • Sugar-2 cups
  • Chopped walnut-1 cup
  • Butter-3/4 cup
  • Unsweetened baking chocolate-4 bar(available in all super market)
  • Semi-sweet chocolate chips-250 gms

PREPARATION:

  1. Pre heat the oven to 177 degree .
  2. Melt the chocolate bar and butter in a saucepan,with low flame . Till it gets melted to a fine paste.keep aside to cool.
  3. Take a bowl, mix the chocolate paste and sugar, blend it well. Add egg, vanilla, flour, nuts and blend it to a smooth paste.
  4. Now add the chocolate chips, stir once. Pour this in a greased rectangular baking tin.
  5. And place it in the oven for 30 to 35 minutes
  6. Remove and cool. Cut it into squares.
  7. This chocolate brownie, with rich chocolate is a famous recipe  especially in Christmas eve.

BASBOUSA-SEMOLINA CAKE

ARABIAN BASBOUSA SEMOLINA CAKE 

This basbousa Semolina cake special dish in Ramadan if-tar time. This is very simple to cook.

INGREDIENTS:

  • Melted butter-200 gm  semolina cake1
  • Condensed milk-1 tin
  • Baking powder-1 1/2 tbls
  • Semolina(rava)-2 cups
  • Ground almonds-1 cup
  • Water- 1cup

Syrup:

  • Sugar-2 cups
  • Water- 1 1/2 cup
  • Lemon juice-1 tbls
  • Rosewater- 1 tbls
  • Almonds crushed-1 tbls

PREPARATION:

  1. Mix butter,Condensed milk,Baking powder well to a smooth paste.Add water,semolina and almonds and stir well till all gets combined well.
  2. Pour the mixture in a baking tin. Bake in 190°c preheated oven for 35 minutes,or until its golden in top.
  3. Remove and pour the syrup all over. Refrigerate to cool it completely. Cut into diamond shapes and serve as snack.

Preparation Of  Syrup

  1. Boil sugar and water in a pan. Simmer for 10 min. Remove and mix lemon juice, almonds and rose water.
  2. This Arabic sweet basbousa or the semolina cake should be loose and soft in texture unless like cakes. Decorate on top with almonds and pistas, and enjoy this delightful dessert.
