SWEET PONGAL (CHAKKARA PONGAL)

Pongal is held to honor the sun for a bountiful harvest. Pongal is celebrate by Tamil community every where in the world. Thats why pongal is called Tamilar Thirunal. This sweet rice is mainly prepared during pongal festival with rice, dal, jaggery and milk and stirred continuously until the content turns to a porridge. It is richly flavored and garnished with cardamom, nutmeg and cashews with lots of ghee.It is called as sweet pongal, chakkara pongal. lets see the easy recipe of chakkara sweet pongal pudding recipe.

This special pudding is traditionally prepared in an earthen pot.Now let us see how to make the simple and easy way of making the most relished sweet pongal (pudding).

INGREDIENTS:

  • Raw rice-1 cup          pongal recipe
  • Moong dal -a handful
  • Jaggery-1  1/2 cups
  • Milk-2 cups
  • Water-2 cups
  • Condensed milk-1 tin
  • Cardamon powder-1 tbsp
  • Ghee-1 cup
  • Ghee fried cashew-nuts& raisins a handful
  • Ghee fried coconut bits

PREPARATION:

  1. Wash the green gram  dal and rice nicely.Dry roast rice and dal together until the rice turns white.
  2. Transfer it to a pressure cooker and add milk,water,half the ghee,a pinch of salt to enrich the flavor and pressure cook for 3 whistles or until soft like pudding.sweet pongal garnish
  3. In a wide bottomed kadai, heat the brown sugar(jaggery) with half a cup water.when it melts add it to the cooked rice and stir well together with the condensed milk,cardamon powder,roasted nuts and the remaining ghee.The more ghee you add the best taste you will ever have.Keep in low flame until all mingles and form a smooth pudding.

INGREDIENTS:

  • Pre-boiled spaghetti -1/2 cup
  • Mango icecream -3 Scoops
  • Preset mango jelly -2 tblsp
  • Fresh Milk-1/2 cup
  • Any Chopped fruits -1 tblsp
  • (Apple, Pineapple, Banana)
  • Thick juice mango or sugar
  • Soaked sago or
  • Sabudana seeds -1/2 tsp ( optional)

PREPARATION:

  1. Take a tall wide mouthed glass,add all the mixture in a layer form.
  2. First boiled spaghetti thin sized followed by cold milk mixed with sugar ,fruits, jelly ,thick mango syrup and finally scooped ice-cream and sabudana or sabji/basil  seeds soaked in water.
  3. Freeze it until serving. Serve chilled.Serve with a straw and spoon.

GULAB JAMUN COCONUT RABRI

This is a fusion recipe with the combination of  the traditional Gulab Jamun with coconut Rabri.Great combination which is worth trying.

INGREDIENTS:

Gulab jamuns (RECIPE) pieces cut  into halves

FOR THE COCONUT RABRI:

  • Milk-2 liter
  • Condensed milk-1/2 cup
  • Sugar-1/2 cup
  • Khova(milk extract)-1/2 cup
  • Cardamon powder-1/2 tsp
  • Cream-1/2 cup
  • Saffron- a pinch
  • Mixed dry fruits chopped-2 tbsp
  • Tender coconut shredded-1/4 cup
  • Rose syrup-2-3 tbsp

PREPARATION:

  1. Take a pan and add  milk, condensed milk, sugar, cream,khova together and simmer for 1-2 hours or until it thickens.
  2. Add in cardamon powder for flavoring.
  3. Switch off the flame when it is thick and mix in shredded tender coconut .
  4. To serve, in a plate place a bed of Rabri and place Jamuns on top, garnish with nuts ,saffron, rose syrup,and  served chilled.
  5. This is a famous north Indian Punjabi dish served after a sumptuous meal.

VALENTINE LUNCH RECIPES

Chicken Risotto

INGREDIENTS:

  • Arborio Risotto- 100 Gm                          CHICKEN RISOTTO
  • Chicken julienne-4 tbsp
  • Chicken Breast- 1 Nos
  • Chopped Garlic- 5 Gm
  • Chopped Onions- 5 Gm
  • Salt To taste
  • Crushed Black Pepper- 5 Gm
  • Chicken Stock-1/2 Lt
  • Olive Oil- 100 Ml
  • Mushrooms- 20 Gm
  • Fresh Cream -2 tbls
  • Cheese- 20 Gm

PREPARATION:

  1. Cook Arborio Risotto rice (a fat, starchy, medium grain rice) on low heat with chicken stock for about 30 minutes or till done (Its high starch content is released in the slow cooking process, creating a creamy consistency).
  2. In a pan heat Olive oil and saute onion & garlic
  3. Add the Chicken Julienne’s in it and soaked sliced mushrooms and pepper.
  4. Add the Pre- cooked risotto and cook it further with some more chicken stock.
  5. Once cooked, add fresh cream & finish with chopped cilantro & grated cheese over it.
  6. Serve in a deep dish garnished with cheese.
  7. Melt 2 tablespoons of butter in a skillet over medium heat add chicken breast soaked in salt,pepper,chili,crushed garlic for about 30 minutes, and cook 3 minutes on each side or until done. Cut chicken lengthwise into slices,and serve on top with the risotto.

Chicken Pasta

INGREDIENTS:

  • Boneless,skinless chicken breasts-2 in nos    CHICKEN PASTA
  • Kosher salt-1/4 teaspoon
  • Freshly ground pepper-1/4 teaspoon
  • Canola oil-1 tablespoon
  • Green bell peppers, thinly sliced-2
  • Onion thinly sliced-1 large
  • Hot paprika-2 teaspoons
  • Crushed tomatoes-1 1/2 cups
  • Chicken broth-1/2 cup
  • Lemon juice-1 tablespoon
  • Sour cream-1/4 cup
  • Chopped fresh parsley-2 tablespoons
  • Boiled macaroni,pasta-2 cups

PREPARATION:

  1. Sprinkle chicken with salt and pepper.Heat oil in a pan and fry chicken on low heat,turning occasionally,until browned,3 to 5 minutes.Transfer to a plate.
  2. Add bell peppers and onion to the pan and cook,covered,over medium stirring occasionally, until cooked.Add paprika,tomatoes,broth and lemon juice.
  3. bring to a boil.Return the chicken to the pan; reduce heat.Spoon some sauce over the chicken and cook,turning occasionally, until the sauce is reduced and the chicken is cooked through,mix in the boiled pasta,and cook for two minutes.
  4. Remove from the heat,stir in sour cream.Sprinkle with parsley,and serve hot with salad .

  • Fresh boiled spaghetti-1 packet
  • or as required
  • Chicken pieces-1/2 kg
  • Canned green peas- 1 cup
  • Potatoes (in slices): 1-2, like finger chips
  • Thin Carrot slices-1/2 cup
  • Green chili- 4-5
  • Tomato paste- 3-4 tbsp
  • Garlic paste- 1 tbsp
  • Red chili powder- 1tbsp
  • Salt to taste
  • Cream cheese- 3-4 tbsp
  • Oil as required

PREPARATION:

  1. Heat oil in a pan,add garlic paste,followed by chili powder and salt.
  2. Saute a little,add chicken pieces,tomato paste,cook on low heat till the gravy thickens.
  3. Add all the veggies and cook.Add cream cheese,and remove from fire.
  4. Mix well add chopped cilantro for garnishing,you can either mix the spaghetti in the gravy,or dish out the sauce on top of the boiled hot spaghetti and garnish accordingly.Serve hot this yummy spaghetti…

CHEESE MACARONI

INGREDIENTS:                     cheese macaroni

  • Elbow Macaroni-100 gm
  • Cheese sauce-2 tblcp
  • Grated cheese-50 gm
  • Salt to taste
  • Pepper powder-1 tsp
  • Breadcrumbs-1 tblsp
  • Butter-25 gm

PREPARATION:

  1. Boil macaroni until cooked,but don’t overcook.Drain well.
  2. Add the cheese sauce,salt,pepper,mix well.Place this in a baking tray.
  3. Sprinkle grated cheese,breadcrumbs on top and drizzle with butter or margarine.
  4. Bake it for 25 minutes in a moderately hot oven on 200 degrees; bake it till crisp and golden, light brownish color.lasagna
  5. Serve with hot chili sauce or ketchup.You can also layer boiled lasagna (a type of pasta in sheets) at the bottom,middle and top layer(optional).In the middle you can add any grated chicken gravy as done in spiced spaghetti.And bake as same till golden crisp on top.
