<h3><span style="color: #ff0066;"><strong>INGREDIENTS:</strong></span></h3>

<li>Kataifi(can be found in most middle eastern,grocery stores)-1 full package or fine vermicelli</li>
<li>Butter -200 gm melted</li>

<h3><span style="color: #ff0066;"><strong>FOR SYRUP:</strong></span></h3>

<li>Water-1 cup</li>
<li>Juice of 1/2 lemon</li>
<li>Orange blossom or rosewater-1 tsp</li>
<li>Blanched whole almonds &amp; pista-1/4 cup</li>
<li>Walnuts,coarsely chopped -5 tbs</li>
<li>Granulated sugar-2 1/2 tbsp</li>
<li>Cinnamon powder-1/4 tsp</li>
<li>Soft ricotta cheese -800 gm</li>
<li>Butter, for greasing</li>
</ul>
<h3><span style="color: #ff0066;"><strong>PREPARATION:</strong></span></h3>
<ol>
<li style="text-align: justify;">Prepare sugar syrup with 1 cup of water and 1 1/2 cup of sugar along with lemon juice.Bring to boil,and simmer for 15 to 20 minutes until it forms a syrupy consistency.</li>
<li style="text-align: justify;">Remove from heat allow to cool.Add rosewater,and keep aside.</li>
<li style="text-align: justify;">Pre -heat the oven to 180 degree centigrade.</li>
<li style="text-align: justify;">In a large bowl gently loosen the kataifi dough and mix well with the butter.</li>
<li style="text-align: justify;">Grease the baking pan with butter and place half the dough at the bottom press evenly.</li>
<li style="text-align: justify;">Spread bits of ricotta cheese all over,then cover with the remaining kataifi dough,press gently .</li>
<li style="text-align: justify;">Sprinkle fine pieces of walnuts,almond,pista all over.Sprinkle cinnamon powder and  granulated sugar.Place another thin layer of remaining kataifi and press well.</li>

<li style="text-align: justify;">Invert on to serving plate.Decorate with remaining nuts.serve warm.</li>
<li style="text-align: justify;">It is good to warm up before serving,because the cheese tastes better.it is a well known Arabic dessert all over the world and its really yummy&#8230;</li>

<li>Take a pan and add  milk, condensed milk, sugar, cream,khova together and simmer for 1-2 hours or until it thickens.</li>
<li>Add in cardamon powder for flavoring.</li>
<li>Switch off the flame when it is thick and mix in shredded tender coconut .</li>
<li>To serve, in a plate place a bed of Rabri and place Jamuns on top, garnish with nuts ,saffron, rose syrup,and  served chilled.</li>
<li>This is a famous north Indian Punjabi dish served after a sumptuous meal.</li>

<li style="text-align: justify;">Add water,salt food color,when it starts boiling add the rava(semolina),and stir well without any lumps.cook on low flame for a minute.</li>
<li style="text-align: justify;">Now add the sugar slowly, just the way you added the rava, so it blends in well.</li>
<li style="text-align: justify;">Keep stirring, feel the consistency loosening by itself (the sugar gives out water).</li>
<li style="text-align: justify;">Now add 1/4 tsp cardamon powder,essence keep stirring once again till the kesari thickens.</li>
<li style="text-align: justify;">Pour the ghee generously,and stir well.Don&#8217;t let it stick to the bottom.</li>
<li style="text-align: justify;">The ghee starts oozing out on the sides.That&#8217;s the perfect time to turn off the flame.you can also add bits of any fruit of your choice.TRANSFER THE KESARI TO A GHEE COATED PLATE,PRESS EVENLY,AND SET TO COOL.</li>
<li style="text-align: justify;">When it s cool cut into any shapes you like.Or serve as such.</li>

<li>Cashew powder- 2 cups</li>
<li>Sugar- 1 cup</li>
<li>Water-1/4 cup</li>
<li>Ghee-2 tbls</li>
<li>Edible silver foil-3 sheets(optional)</li>

<h3><span style="color: #ff0066;"><strong>PREPARATION:</strong></span></h3>
<ol>
<li>Grind dry cashews in a grinder to a fine powder due to its oil consistency it may become a paste or lump so do not add any water while grinding can roast a little in humid climate.. Keep aside.</li>
<li>Take sugar in a pan and add water. Boil till a single thread syrup is formed,it may take around  3-4 minutes after it starts boiling.If you touch between your two fingers you can see a string like, this is the correct stage.</li>
<li>Switch off the fire. Mix cashew paste into the syrup, break if any balls or lumps with a spoon, by stirring well. Keep in low flame add ghee also.</li>
<li>When the content leaves the sides of the vessel, remove from fire. Pour  the content evenly to a greased vessel  and roll it evenly .</li>
<li>Let it cool and then cover with the silver foil gently.</li>
<li>After 1 or 2 hour, cut the burfi&#8217;s into diamond shape. This sweet remains good for about 4-6 weeks under normal room temperature.</li>
