Carrot Halwa Recipes

Gajar halwa, this is one of the famous delight easy recipes in north indian sweet verity. Good for eyesight and Containing Vitamin A. This is saffron flavored carrot halwa.

INGREDIENTS:

  • Carrot-1 kg (grated finely)
  • Milk-1 cup
  • Sugar-1 1/2 cup
  • Ghee+oil -1 cup
  • Khova-300 gms
  • Chopped cashew-3 tbls
  • Few strands of saffron

PREPARATION:

  1. Grate carrots in a mixer not to a smooth paste.
  2. Put the grated carrot in a pan along with milk, sugar and half of the ghee. A pinch salt, (adding this to all sweets enhances the desserts flavor).
  3. Boil nicely till the liquids are all absorbed, now add the remaining ghee add stir nicely.
  4. Add the khova, cashew and stir well till its oil gets separated and forms a ball shaped without touching the vessels sides.
  5. Now add the saffron strands mixed in a little amount of warm milk.This gives a royal aromatic flavor while it slippers through your tongue.At this stage you can remove it from fire.
  6. You can either serve hot or refrigerate a little. You can store this even for 7 more days in a refrigerator.

MAKING OF KHOVA:

Boil milk nicely, while boiling add 1tbls lemon juice and cold water a little and switch off the fire leave it aside. The milk will curdle. Now boil again till the water completely gets separated and sieve this khova. Now take the sieved khova in a pan add sugar generously and stir well while boiling till it becomes nicely thick  milk sweet, add the saffron, while its still hot, and blend together to get its full flavor.

 

You can either have this as a dessert by itself  or can use in all types of halwas as a rich taste giver.

INGREDIENTS:

  • All purpose flour-2 1/4 cup                         christmas-Chocolate-Cookie
  • Salt-1tsp
  • Baking powder-1 tsp
  • Vanilla powder-1 tsp
  • Egg-2
  • Chocolate chips-2 cup
  • Coconut flakes-2 cup
  • Butter-1 cup
  • White sugar-1 cup
  • Brown sugar-1/2 cup
  • Chopped almonds – 4 tbls

PREPARATION:

  1. Pre-heat the oven to 190 degree.
  2. Take a bowl add the melted butter and sugar. Beat until fluffy along with the egg.
  3. Add one by one, salt, vanilla powder, flour, baking powder and stir to a creamed mixture.
  4. Now add the chocolate chips,coconut flakes, (JUST TO GIVE A TRADITIONAL INDIAN TOUCH) chopped almonds and blend it together.
  5. Take a spoonful of this mixture and place it in a cookie sheets(baking sheet), and place in the oven for8 to 10 minutes.
  6. Let it cool in the sheet for5 min, before removing..
  7. This delicious cookie  with creamy chocolate drops, is simply cool and yummy……..its sure a divine delight for all chocolate lovers….

BASBOUSA-SEMOLINA CAKE

ARABIAN BASBOUSA SEMOLINA CAKE 

This basbousa Semolina cake special dish in Ramadan if-tar time. This is very simple to cook.

INGREDIENTS:

  • Melted butter-200 gm  semolina cake1
  • Condensed milk-1 tin
  • Baking powder-1 1/2 tbls
  • Semolina(rava)-2 cups
  • Ground almonds-1 cup
  • Water- 1cup

Syrup:

  • Sugar-2 cups
  • Water- 1 1/2 cup
  • Lemon juice-1 tbls
  • Rosewater- 1 tbls
  • Almonds crushed-1 tbls

PREPARATION:

  1. Mix butter,Condensed milk,Baking powder well to a smooth paste.Add water,semolina and almonds and stir well till all gets combined well.
  2. Pour the mixture in a baking tin. Bake in 190°c preheated oven for 35 minutes,or until its golden in top.
  3. Remove and pour the syrup all over. Refrigerate to cool it completely. Cut into diamond shapes and serve as snack.

Preparation Of  Syrup

  1. Boil sugar and water in a pan. Simmer for 10 min. Remove and mix lemon juice, almonds and rose water.
  2. This Arabic sweet basbousa or the semolina cake should be loose and soft in texture unless like cakes. Decorate on top with almonds and pistas, and enjoy this delightful dessert.

AMERICAN STUFFED PAN CAKE

INGREDIENTS:

  • Plain flour(maida)-1/4 kg
  • Egg-3
  • Salt -a pinch
  • Grated coconut-2 tbls
  • Sugar-150 gm
  • Refined oil
  • Cardamom powder-2 pinch

PREPARATION:

Take a bowl,and mix the egg contents with flour and salt.Add enough water till the batter is of pouring consistency.
Mix the grated coconut,sugar and cardamom powder in a separate vessel and keep aside.
Heat the pan,smear oil all over.
Pour a large spoon full of batter to the pan,and spread to a round shape(very thin layer).Close the pan with a lid and cook.When its done,put a spoon full of the coconut mixture in the center and spread.
Now roll this tightly and pin with a toothpick.Serve hot or cold.The cardamom coconut flavor will be simply delicious,in this American pancake.

Carrot Jam

INGREDIENTS:carrotjam

  • Grated carrot – 1 cup
  • Sugar                 – ½ cup
  • Honey              – 1 teaspoon
  • Salt                   – a pinch

PREPARATION:

Boil carrot nicely in a pressure cooker then grind it to a smooth paste in a mixer Add sugar and cook on a low flame nicely stir it until it thickens like Jam. At this stage, switch off fire, add honey, stir well. Garnish with fried cashew on top.

TOMATO JAM

INGREDIENTS:tomato_jam

  • Plum Big Tomato – 10
  • Sugar- 1 1/2 cup
  • Ghee – 100gm
  • Cashew – 10

PREPARATION:

  1. Boil the tomatoes in water.Peel off the skin,grind in a mixer to a smooth paste.Plum ripe tomato is best for this tomato jam recipe.
  2. Sieve this juice to remove the seeds from the tomatoes.Now take a vessel pour the juice, sugar and ghee or oil, boil nicely till its water consistency goes and it thickens like jam add crushed cashew along with this.
  3. Stir nicely, until a stage that it separate oil and comes like a ball without touching the vessel sides. At this stage remove from fire.You can store this in a refrigerator for 2-3 weeks.This will be a good combination for a spicy biryani.This is one of our native special.This tomato jam sweet pickle suits as a side dish for any breads,tortillas,just stuff it and serve.Tomato fruit jam just tastes yummy as a dip sauce…..
