• Beetroot-2 med sized
  • Carrot-1
  • Capsicum-1
  • Onion small -1
  • Pepper powder-1/4 tbls
  • Salt to taste


Scrape the skin from the beetroot,carrot and grate nicely.
Cut capsicum and onion into small pieces.
Boil all these vegetables in 4 cups of water,till it becomes soft.
To this add salt and pepper.If you want as in drinking consistency you can grind this,or else leave as such.You can also season with a stock cube for extra flavor.
Serve hot with grated paneer or cheese on top.This is the best healthy soup,with full richness of vitamins and iron.

Take a bowl,and mix the egg contents with flour and salt.Add enough water till the batter is of pouring consistency.
Mix the grated coconut,sugar and cardamom powder in a separate vessel and keep aside.
Heat the pan,smear oil all over.
Pour a large spoon full of batter to the pan,and spread to a round shape(very thin layer).Close the pan with a lid and cook.When its done,put a spoon full of the coconut mixture in the center and spread.
Now roll this tightly and pin with a toothpick.Serve hot or cold.The cardamom coconut flavor will be simply delicious,in this American pancake.

Carrot Pulav


  • Sliced Carrot – 2 cup
  • Basmati Rice – 1 cup
  • Cinnamon – 2
  • Cardamon – 2
  • Cloves – 3
  • A few springs of mint leaves
  • Almond,Cashew – 5
  • Dry chili 3
  • Ghee 1 teaspoon
  • Oil 1 spoon
  • A bunch of coriander leaves
  • Salt – For taste.


  1. Put ghee in a vessel and add Cinnamon, cloves, cardamom, dry chili. Fry for a minute.Remove from fire. Grind all these along with almond and cashew to a coarse- powder.
  2. Soak basmati rice in water.Pour oil in a pressure cooker.Fry mint leaves,and then fry the rice for a while.(can also use ginger garlic paste it depends on your taste)
  3. Take juice of the carrot by grinding it. Add this stock to the rice.
  4. Pour water to the rice, keep your finger ,the level of water should be up to your first line of the finger.Add salt and the grind ed masalas.Close the lid of the pressure cooker,make it for a whistle.
  5. Garnish it with coriander leaves serve it hot,with a salad(sliced onion chilly mixed in yogurt)………

Carrot Jam


  • Grated carrot – 1 cup
  • Sugar                 – ½ cup
  • Honey              – 1 teaspoon
  • Salt                   – a pinch


Boil carrot nicely in a pressure cooker then grind it to a smooth paste in a mixer Add sugar and cook on a low flame nicely stir it until it thickens like Jam. At this stage, switch off fire, add honey, stir well. Garnish with fried cashew on top.

Bitter Gourd Fry

Momordica charantia is the botanical name and  generally it is called bitter melon or bitter gourd.  


  • Bitter gourd-1/4 kg
  • Salt to taste
  • Aginamotto-1/2 tbls
  • Chilly powder-1/2 tbls
  • Coriander powder-1 tbls
  • Curry powder-1/2 tbls
  • Turmeric powder-a pinch
  • Corn flour-2 tbls
  • Gram flour-2 tbls
  • Oil for frying


Cut the bitter gourd into thin round slices remove the seeds in the center.
Mix all the masala powder to the bitter gourd slices. Slightly sprinkle water till all blends with the masalas.Keep it aside for half an hour.

Deep fry in oil. This masala removes all the bitterness in this vegetable. Even the kids love eating more. Since they wont if we give them as curry.

Its like crispy chips and easy side dish. You can have it as a snack. Good for diabetic patients. Since bitter gourd juice helps in immunization against small worms in our stomach. Its Must to give to children as they eat more junk foods like chocolates and chips.
