Wash and cut chicken into medium size pieces.Add half of the ginger garlic paste,followed by chilly powder,turmeric powder,coriander powder, green chilly,salt and marinate for 30 min.
Roast and grind the masala seasoning items to a smooth powder.
Heat a pan add oil.Then saute onions till pink, add the rest of the ginger garlic paste,and fry a little.Then add finely chopped tomatoes and the mint leaves and half of the coriander leaves.Saute for few minutes,add salt,turmeric and simmer for 5 min.
Now add the marinated chicken pieces.Cook on high for 5 min,with continuous stirring.
Add the ground seasoning powder to the chicken and add 1/2 cup of water and simmer till chicken is tender.Pour 2 tsp of oil over the tender chicken and stir fry until each pieces looks separate.And also the oil starts separating.
Finally garnish with the remaining coriander leaves.And serve this all time favorite side dish.
You can also saute some onions, tomato, capsicum,stir fry and add as garnish at last.
