Very simple to cook too tasty sweet dish from South India with Semolina (rava) as main ingredient. Kesari sweet is very easy to make simple dessert as a fast food.
Rava(semolina) -1 cup
Sugar-1 1/4 cups
Cashew nuts and raisins -3 tbsp (fried in ghee)
Pineapple or any essence-1/4 tsp
Orange edible food color- a pinch
salt a pinch
Ghee- 1/2 cup
Cardamon- 4 to 5(well crushed)
Pour few tsp of ghee in a hard bottom vessel,roast rava till it turns light brown,keep aside.
Again add the remaining ghee,heat a little,add cardamon,cashews,raisins fry till nice golden brown.
Add water,salt food color,when it starts boiling add the rava(semolina),and stir well without any lumps.cook on low flame for a minute.
Now add the sugar slowly, just the way you added the rava, so it blends in well.
Keep stirring, feel the consistency loosening by itself (the sugar gives out water).
Now add 1/4 tsp cardamon powder,essence keep stirring once again till the kesari thickens.
Pour the ghee generously,and stir well.Don’t let it stick to the bottom.
The ghee starts oozing out on the sides.That’s the perfect time to turn off the flame.you can also add bits of any fruit of your choice.TRANSFER THE KESARI TO A GHEE COATED PLATE,PRESS EVENLY,AND SET TO COOL.
When it s cool cut into any shapes you like.Or serve as such.

Rice -2 cups
Lemon juice -3 medium sized lemons
Ginger -1 small piece
Bengal gram- 1 tsp
Urad dal -1 tsp
Mustard seeds -1 tsp
Curry leaves -1 spring
Coriander leaves- a few
Green chillies- 2 -3
Oil for seasoning
Salt to taste
Fenugreek seeds,Asafoetida-1/2 tsp each
Grind fenugreek seeds, asafoetida, turmeric,and dry chilly to a course powder and keep aside.
Take juice of lemon,cook the rice ,and cool aside (the rice should be cooked so that it never sticks together,add a teaspoon of oil while cooking).
Season mustard seeds, urad dal, ginger, Bengal gram and curry leaves in oil.Saute a little followed by the grind-ed powder,green chilly,and salt to taste.
Add this to rice and sprinkle juice of lemon,mix well.
Sprinkle with coriander leaves and serve this mouthwatering lemon rice with any spicy side dish.

Basmati Rice -500 gm
Hard boiled eggs-3
Shelled peas-1 cup
Nuts (cashew nuts, pistachios)-50 gm
Juice of 3 limes
Coriander seeds-1 tablespoon Cumin seeds-½ teaspoon Garam masala powder-½ teaspoon Small bunch of coriander leaves A few springs of mint leaves Red chillies-3 Small piece of ginger Garlic-3 cloves Chillies-3 green
Wash the rice and soak in water for 15 minutes.Cook separately by adding 1 1/2 cups of water for a cup of rice, along with some cardamon,cloves and cinnamon stick(2 each).
Cook the rice until it breaks while pressing in hands(3/4th). After cooked remove the rice and spread it out on a thali or a big pan.
In the mean time prepare the gravy,slice onions,tomato. Slice eggs length-wise in half.Clean and cut chicken into small pieces.
Wash, peel and quarter the potatoes. Grind the ingredients for masala to a smooth paste.
Heat ghee in a fry pan and fry the onions until brown.Remove half and keep aside for garnish. Fry the nuts, cashews and keep aside. Add ground masala to remaining onions and fry well.
Add chicken pieces, potatoes, green peas, salt to taste, yogurt, tomatoes and fry well. Add 2 cups of water and cook until all the water is absorbed,and it forms a thick gravy.
Put 2 tablespoons of ghee in an oven proof dish. Place a layer of cooked rice followed by a layer of chicken. Place a layer of fried onions, boiled eggs and scatter with sultanas. Repeat layers and finish with a layer of rice. Sprinkle some ghee, RAISINS, FRIED CASHEWS on last layer of rice.
Place in an oven and bake for 15 minutes, or until the top gets brown. In case of stove you can keep in low flame and simmer for 15 minutes. Remove from fire and mix evenly. Now Easy Recipes chicken biryani is ready and Serve hot with spiced onion yogurt salad.
