Spring Rolls

Homemade spring rolls is a unique style appetizer with variety of fillings based on their country and origin.It is very crispy from outside with crunchy vegetables or meat inside.The beauty of spring rolls is that you can add any filling of  Ur choice like thin slices of vegetables and much more…

INGREDIENTS:

For the Dough:

  • All purpose flour – 1/2 cup
  • Semolina flour – 1/4 cup(Optional)
  • Oil – 1 1/2 Tbsp
  • Salt – 1/4 Tsp
  • Lukewarm water – 1/4 cup

For the Filling:

  • Potato – 2 large
  • Green chillies – 1 chopped
  • Green peas – 1/4 cup
  • Cumin seeds – 1/2 tsp
  • Coriander powder – 1 tsp
  • Garam masala – 1/4 tsp
  • Mango powder – 1 tsp
  • Salt to taste

PREPARATION:

Dough

  1. Mix flour, salt and oil together and knead to make a soft dough.
  2. Cover it with damp cloth and leave it aside for 30 minutes.
  3. Can also use ready made spring roll  sheets .

Filling

  1. Boil potatoes and cut them into small pieces.
  2. Crackle cumin seeds in hot oil.
  3. Add chopped chillies, coriander powder and stir nicely.
  4. Add green peas and cook till they get tender.
  5. Add the potato pieces and mash it well .Cook for 5 minutes.
  6. Add garam masala , amchur(mango) powder and salt.
  7. Mix well and add  seasoning according to taste.

Making Spring rolls:

  1. Before filling the rolls prepare a paste by mixing 1tbsp all – purpose flour and 2 tbsp water and keep it aside.
  2. Knead the dough and divide them into  balls. Roll each ball into thin slices and cut it to form a rectangle.Similarly make with all the dough balls.
  3. Now fill it with potato mixture and covering the both ends roll it tightly and seal with the flour mixture prepared earlier.you can also make slithers of any vegetables like cabbage, carrot,and stir fry with spices and use as filling, and also bits of chicken fried with any spices of your choice,make it sure it is dry to fill in the dough.
  4. Repeat the same step with other spring roll sheets.
  5. Heat oil in a pan to medium heat and when the oil is hot enough, place the rolls  in the hot oil.
  6. Fry the spring rolls till they are golden brown in color and they are ready to serve with any sauce or chutney.

KUNAFA (Arabic Sweet dessert)

Kunafa (called as kunafe, Kanafeh, knafeh, kunafeh, kunafah) basbousa and UmAli Dessert are the best arabic sweet dishes traditionally eaten during Ramadan in Arab and middle-eastern countries. Now Easy recipes specially gives you  the easy methods of preparing arabic sweet dessert  Kunafa ( Arabic Sweet Cheese Pastry) and later we will   post UmAli arabic Dessert.

kunafa                Kunafa  is served during Ramadan If tar, the time between sunset and breaking fast by Muslims. Kunafeh  is one of the well known Arabic sweet dessert dishes, with a cream cheese filling in the center.

There are many types of fillings in the basic recipe like banana, cream, cheese and nut, just to name a few.

INGREDIENTS:

  • Kataifi (can be found in most middle eastern, grocery stores)-1 full package or fine vermicelli
  • Butter -200 gm melted

FOR SYRUP:

  • Sugar -1 1/2 cup
  • Water-1 cuparabic-sweet-kunafa
  • Juice of 1/2 lemon
  • Orange blossom or rosewater-1 tsp
  • Blanched  whole almonds & pista-1/4 cup
  • Walnuts,coarsely chopped -5 tbs
  • Granulated sugar-2 1/2 tbsp
  • Cinnamon powder-1/4 tsp
  • Soft ricotta cheese -800 gm
  • Butter, for greasing

PREPARATION:

  1. Prepare sugar syrup with 1 cup of water and 1 1/2 cup of sugar along with lemon juice. Bring to boil, and simmer for 15 to 20 minutes until it forms a syrupy consistency.
  2. Remove from heat allow to cool. Add rosewater, and keep aside.
  3. Pre -heat the oven to 180 degree centigrade.
  4. In a large bowl gently loosen the kataifi dough and mix well with the butter.
  5. Grease the baking pan with butter and place half the dough at the bottom press evenly.
  6. Spread bits of ricotta cheese all over, then cover with the remaining kataifi dough, press gently .
  7. Sprinkle fine pieces of walnuts, almond, pista all over. Sprinkle cinnamon powder and  granulated sugar. Place another thin layer of remaining kataifi and press well.
  8. Bake in the oven for about 30-40 minutes, till the surface is golden brown.arabic-desert-kunafa
  9. Remove from oven and pour sugar syrup all over hot kunafa. Allow to cool completely.
  10. Invert on to serving plate. Decorate with remaining nuts. Serve Kunafa warm.
  11. It is good to warm up before serving, because the cheese tastes better. Kunafa is a well known Arabic dessert all over the world and its really yummy…

CHICKEN ROLLS

INGREDIENTS:

  • Chapatti or tortillas-2
  • Shredded boneless Chicken-200 gmCHICKEN ROLLS
  • Lettuce leaves  -4
  • Chopped coriander -3 tbls
  • Finely sliced onion-1
  • Sliced tomato-1
  • Cucumber-1
  • Tomato sauce-1tbls
  • Mayonnaise-1tbls

PREPARATION:

  1. First finely shred the chicken pieces.Pour oil in a pan add ginger garlic paste, add the chicken along with required salt,little turmeric powder,and chilly powder. Saute it .
  2. You can also add any curry powder you have ,or even any extra spices of your choice.After its cooked within its juices to a dry form remove from heat. Keep aside to cool.
  3. Take the tortillas(you can also use chappatis or simply roll the bread slices with a chappati roller. it will become a thin sheet like paper bread.)
  4. Arrange the chicken pieces,lettuce leaves,cucumber slices,finely sliced onion.A very small quantities of tomato all fresh.You can add the sauces,its of your own taste.Now roll this carefully and tightly.You can cut this into 4 pieces.This will be easy to eat.
  5. Easy to make for a take out anywhere. The kids love it .You can also use different fillings using vegetables,potatoes,even egg rolls.In a hot season we wont feel like being in the kitchen for a long time preparing the regular dishes.
  6. This is the easiest and ready to serve method with all the things in the refrigerator.You can use even ready made tortillas available in market allover.
